Vegan Lunches: Houmous and Red Pepper Dip

One of our favourite places to eat is Nando’s and when we go, we go all out and have the full three courses. Our usual starter is to have is the all together now, in which you pick three different starters and have a mixture. Our usual is the olives, houmous and pitta and the pitta with red pepper dip. We had a little light bulb moment and realised that these were vegan and decided to create our own version for lunch.

Homous:

Ingredients:

  • 1 tin of chickpeas
  • squeeze of lemon juice
  • 1 tsp of chilli powder
  • pinch of salt and pepper
  • 1 tsb of olive oil
  • 1 garlic clove

Method:

  1. Add all of the ingredients to a blender and blitz together.
  2. Add more of any seasoning if required and serve.

Red Pepper Dip:

Ingredients:

  • 3 roasted red peppers
  • 4 sun dried tomatoes
  • 2 garlic gloves
  • pinch of salt and pepper

Method:

  1. Once again add all of the ingredients to a blender and blitz together.
  2. If it is too bitter for your taste, add a pinch of sugar to counteract this.

We served both the dips with sliced up pitta bread a handful of olives. This a also another great idea to have when guests are over. It’s a social dish and everyone gets involved. When Aaron first mentioned Vegan I had no idea I would be recreating a Nando’s dish. Starting to like this vegan eating. Not gonna lie, still craving bacon though!
