Slow Cooker Desserts: Mocha Cake

So Aaron wouldn’t let me buy the expensive coffee and I am a bit of a coffee snob. So for the last month and half I’ve been drinking tea. Aaron hadn’t realised that the coffee is rank as he’ll drink anything (even blended up insects probably). So when I asked him can we get good coffee on the shopping at the end of this month, that is when it clicked. Aaron then came up with the idea of a coffee cake. I would prefer chocolate, obviously! So as we complement each other so well we came up with a mocha cake.

For the cake:

  • 1  cup of self raising flour
  • Half a cup of butter
  • Half a cup of caster sugar
  • 4 eggs
  • 1 tsp of baking powder
  • 1 tbs of cocoa powder
  • 2 tsp of instant coffee
  • 1 capful of vanilla essence
  • 1 tsp of cinnamon

For the icing:

  • 2 cups of icing
  • 100 ml of water
  • 1 tbs of cocoa powder
  • 1 tsp of instant coffee

  1. In a bowl add all the ingredients for the cake and beat together.
  2. Grease the inside of your slow cooker.
  3.  Pour the cake mix into the slow cooker and cook on high for about an hour.
  4. Whilst the cake is cooking, make the icing.
  5. Add all the ingredients into a bowl and whisk together until you achieve the consistency of runny honey.
  6. When the cake is cooked, pour over the icing and serve straight away or have it when cooled.

So if you have any God awful coffee laying about, this is the recipe for you! The cake was so moist and gooey where the icing had seeped though. The flavours explore your tastes buds with a bit of cinnamon and then a bit of the mocha flavour. I would like to add that I think there was some unfair comments regarding me at the start of this post Megan and I don’t much care for the way you mocha me!!
